How to Make a Cake (Part 20)

ROYAL ICING

Recipe

a. 3 egg whites
b. 1 teaspoon – lemon/lime juice
c. 500g – icing sugar

Procedure

1. Sieve icing sugar in a bowl
2. Whisk the egg white until it is thick and foamy and there is no drop of liquid in a separate bowl.
3. Add the sieved icing sugar to the beaten egg white, a little at a time and mix gently.
4. Add lemon/lime juice (to have a pure white colour) and mix well
5. The mixture should be firm enough to stand up in points or form peaks
6. Add colour as desired
